Fat phobias, or the fear of becoming fat, will begin to rise in countries other than the U.S., due to foreign government cracking down on expanding waistlines. In opposition to fat phobias, according to the Zagat 2012 Guide, southern cuisine will also be trending; celebrity chefs like Marcus Samuelsson are examples of influencers of this trend. Salzman also suggests that the healthy snack category will prevail as well, not only in popularity but in sales. Foodies are also buzzing about flavors such as pickled and peppered treats, like the Korean taco craze. And the continued mobile, pop-up and food truck obsession will continue to redefine how we eat.
